Papaya & White Fungus Soup

Light on the belly, this traditional dessert promotes digestion and good complexion and helps to detoxify your system. 



Ingredients (serve 4) 
1 dried large white fungus, soaked to softened and cut into bite-size pieces
1 small handful of red dates, rinsed and drained
1 handful of wolfberries, rinsed and drained
1 litre of water
1 small unripe and firm papaya, cut into cubes
10 pandan leaves, washed and tied into a knot
rock sugar to taste

Method
1. Bring a pot of water to boil, add fungus, dates, wolfberries and pandan leaves. Cook for about 30 minutes till the fungus is softened.

2. Add papaya and simmer for about 10 minutes and lastly, add sugar to taste. 

3. Serve warm or cold.
