Honey Soy Chicken

Baked Honey Soy Chicken served with mashed potato and salad. 

Ingredients (serves 4)
4 chicken drumsticks
2.5 tablespoons of soy sauce
3/4 tablespoon dark soy sauce
3 cloves of garlic, grated
1.5cm knob of ginger, grated
juice of 1 small lemon
2 tablespoon of honey

1. In a bowl, add the ingredients for the marinate and pour over the chicken drumsticks.

2. Cover and refrigerate for at least 3 hours. Turn the chicken over at least once to ensure the other side gets the marinate as well. 

3. Preheat oven to 180 degree celsius. Transfer the chicken (skin side up) and marinate into a shallow baking dish and drizzle a bit of olive oil over the chicken. Bake for about 40-50 minutes until golden brown and cooked through.
