Grapefruit Cucumber Salad

If you like grapfruit, try this simple and refreshing salad. I like to top with walnut just before serving for extra crunch.

Ingredients (serves 3-4)
1 pink grapefruit
3 small japanese cucumber

Dressing
1 teaspoon lemon or lime juice
1 - 1.5 tablespoon honey
1 tablespoon extra virgin olive oil
salt to taste

Toppings
1 big handful of walnut

Method
1. Remove and discard the white membrane of the grapefruit. Wash and cut the cucumber into cubes.

2. In a small bowl, whisk the dressing.  

3. In a large bowl, add all ingredients and dressing. Mix well and keep in fridge for at least 30 minutes or till serving.

4. To serve, top with walnut. Great side dish with grilled fish or meat.
