Banana Oat Muffin

 
This is a healthier version of my usual banana muffin. I added healthy ingredients rolled oats and flaxseed meal for more fibre and omega 3.    

Banana Oat Muffins (makes 9)

Wet ingredients 
1 large egg 
80g brown sugar 
4 medium ripe banana , mashed 
80g melted unsalted butter
1/2 teaspoon vanilla extract
A pinch of salt

Dry ingredients
165g plain flour
1 teaspoon baking powder 
1/2 teaspoon baking soda
30g rolled oats
20g brown flaxseed meal

Toppings
A small handful of mini chocolate chips (optional)
(if you like to use more chocolate chips, reduce sugar)
 
Method 
1. Preheat oven to 180 degree.
 
2. In a bowl , lightly beat the egg , add sugar and mix to dissolve sugar.  Then add vanilla extract, mashed bananas, salt and melted butter and mix to combine.
 
 
3. Mix flour, rolled oats, flaxseed meal, baking powder and baking soda in a bowl. Make a well in the middle of the dry mixture and pour the wet mixture into it. Give it a quick mix and stop once flour disappear. Do not over mix . 

4. If you are adding chocolate chips, drop them into the batter and give it a quick mix to combine. 
 

5. Scoop into muffin cup 2/3 filled. 

6. Bake for about 20-25 minutes till golden brown or skewer comes out clean.

7. Remove and cool on rack.
