Daigakuimo is one of our favourite snack. The outer is a bit sweet, salty and crunchy, while the inside is soft and moist. So good ! Having said that, the taste of this snack depends on the quality of the sweet potato. Some can be slightly bitter or dry, so get the best you can find.

Ingredients (serves 1-2)
1 medium to large yellow flesh Japanese sweet potato
3/4 to 1 tablespoon vegetable oil
3/4 to 1 tablespoon sugar
1/2 teaspoon soy sauce
1 teaspoon roasted sesame seeds
Method
1. Wash the sweet potato. Cut it into small pieces with a bit of skin on each piece. Soak them in water for about 5 minutes.
2. Heat up a non-stick pan. Add oil and sugar. Drain the sweet potato briefly and add to the pan. Spread out the sweet potato and cover the pan. Cook at medium-low heat for about 8-10 minutes.
3. Using a pair of chopsticks or tongs, turn each piece of sweet potato to cook the other side for about 5 minutes.
4. To test whether the sweet potato is cooked, use a toothpick to poke it. If you can poke through easily, it is cooked. You need not cook until they are brown at this point.
5. When the sweet potato is cooked, turn off the heat and drizzle soy sauce. Give them a quick stir as the sweet potato will brown very quickly at this point. Remove from pan and sprinkle with roasted sesame seeds before serving.

Note : Depending on the size of the sweet potato you are using, adjust the ingredients and cooking time accordingly.
