Chocolate Banana Muffin

Wet Ingredients (makes 6-8 muffins)
1 egg
60ml milk
50g unsalted butter, melted
3 ripe banana, mashed (about 200g) 
30g castor sugar
1/2 teaspoon vanilla extract

Dry Ingredients
1 tablespoon cocoa powder (or 2 tablespoons for stronger chocolate flavour)
125g plain flour
1 teaspoon baking powder

50g walnut, roughly crushed
30g chocolate chips

1. Preheat oven at 190 degree. Combine dry ingredients in a bowl. Set aside

2. In a big bowl, whisk the egg and sugar to combine. Add milk, vanilla extract and whisk to combine.

3. Add melted butter and whisk to combine. Lastly, add mashed banana and mix to combine.

4. Sift the dry ingredients into the wet mixture. Fold using a spatula till combine. Do not over mix. Add crushed walnuts and chocolate chips and mix to combine.

5. Fill muffin liners till 3/4 full. Bake for 20-25 minutes until skewer comes out clean.  

6. Cool on a rack.
