500g raw cashew nuts
1 egg white
2 tablespoon brown sugar
1/2 teaspoon cinnamon powder
1/2 teaspoon salt
Method
1. Spread the raw nuts evenly onto a baking sheet.
2. Bake for about 15 minutes at 180 degree celsius until light golden brown. Use a wood spoon to turn the nuts halfway into baking. Set aside when done.

3. Add soft brown sugar, cinnamon powder and salt to a small bowl. Mix well and set side. You can adjust the amount and use other spices according to your preference. e.g cayenne powder, chilli powder, cumin powder, nutmeg powder, garlic powder.
4. In another small bowl, beat egg white till frothy.
5. Pour the roasted nuts into a mixing bowl. Pour the egg white over the nuts. Mix well to coat. Add the spice mixture and mix well to coat.
6. Pour the nuts back onto the baking sheet. Spread evenly and back into the oven at 180 degree Celsius for another 5 minutes to dry and crisp up.
7. Sprinkle with a little extra salt if you like. Let cool and store into air tight container.
