Lemongrass Drink


Lemongrass drink is a must have whenever we dine at any Thai restaurant. It is so refreshing and goes really well with the spicy Thai dishes. To have it more often, I tried boiling this drink at home and is very happy with the healthier homemade version with less sugar. I am amazed how much sugar is needed to get the same level of sweetness served at the restaurant. No kidding !     

Lemongrass drink (serves 4-6)

Ingredients 
Water - 2000ml
Pandan leaves - one big bunch, about 15 leaves
Lemongrass - 8-10 stalks
Rock sugar -  according to taste

Method 
1. Wash the pandan leaves and fold them up. Fasten with a longer leaf. 

2. Wash the lemongrass stalks. Cut away a bit of both ends. Remove the outer layer if necessary. Cut them into 2-3 parts. Use the back of a knife to bruise the hard end of the lemongrass. This helps to release the fragrant. 

3. Bring the water to a boil. Add lemongrass and pandan leaves and simmer for about 45 minutes or slightly longer. 

4. Add sugar and stir to dissolve. 

5. Strain and serve it hot or cold.
