Stir-Fried Watercress

Watercress has always been used for making soup in my family. Making watercress soup takes at least 1-2 hour. There was once I didn't have time to make soup and did a stir-fried dish instead. The whole family loves it and it has become a regular dish at home. Another simple, fast and delicious dish !

Note : Watercress does not keep well. Use it best on the day you bought it, if not the next day.

Ingredient ( serves 4)
2 bunches of watercress
2 cloves of garlic, sliced
2 tablespoon of koji berries
Salt and pepper to taste

Method
1. Wash and rinse the watercress. Cut them into 3 parts and drain excess water.

2. Slice the garlic. Rinse the koji berries. Set aside.

3. Heat up wok till hot.
  • Add some vegetable oil.
  • Add garlic and stir-fry for about 15 seconds to release the fragrant.
  • Add watercress and stir-fry for couple of minutes.
  • Season with salt and pepper.
  • Add about 120ml-150ml of water.
  • Add in the koji berries.
  • Lastly, give it a quick stir and cover the wok to cook for about 2-3 minutes.
4. Serve immediately.
