Lime Cupcakes


These cupcakes are mildly tart and have a lovely citrus fragrance. Citrus lovers, do give it a try!



Lime Cupcakes ( makes 12 )

Ingredient A
230g all purpose flour
1 tsp baking powder
1/2 tsp baking soda
A pinch of salt

125g fine castor sugar

Ingredient B
3 large eggs, beaten
200ml plain yoghurt
100ml sunflower oil/canola oil

Zest of 2 limes
1 tablespoon of lime juice


Method
1. Preheat oven to 180 degree.

2. Ingredient A : Sift flour, baking powder and soda into a mixing bowl. Add salt and sugar . Mix and set aside.

3. Ingredient B: In another bowl, beat 3 eggs lightly (with balloon whisk), then add oil, yoghurt, zest and juice. Mix well.

4. Add flour mixture into wet mixture in 3 batches,  mix well using a balloon whisk until combined. Don't overmix. Batter should be rather runny and smooth.

5. Fill muffin liners about 85% full and bake at 180 degree for about 20mins or until skewer comes out clean.

6. Cool on rack.

  1. I think you have got limes and calamansis mistaken. The fruit in your picture is a lime. Limes are bigger and have whitish flesh. Calamansis are smaller and have yellowish flesh. Calamansis are typically served with mee rebus for you to squeeze the juice.
