Banana Walnut Chocolate Chip Muffin


I always make these whenever I have overripe bananas. They are good for breakfast and snack. Sometimes, I like to substitute 1/3 of the plain flour with wholemeal flour like those in the picture above. They will be darker in colour.

Banana Walnut Chocolate Chip Muffin ( makes 10-12)

Wet ingredients 
1 large egg 
80g castor sugar 
4 medium ripe banana , mashed 
80g melted unsalted butter
1/2 teaspoon vanilla extract
A pinch of salt

Dry ingredients
180g plain flour
1 teaspoon baking powder 
1/2 teaspoon baking soda
40g walnut, crushed with hand 
30g semi sweet mini chocolate chip

Method 
1. Preheat oven to 180 degree.
 
2. In a bowl , lightly beat the egg , add sugar and mix to dissolve sugar.  Then add mashed bananas vanilla extract, salt and melted butter and mix to combine. ( by hand using balloon whisk will do ) 

3. Mix flour, baking powder and baking soda in a bowl. Sift into wet mixture. Mix to combine . Once flour disappear , stop mixing . Do not over mix . 

4. Add walnuts, and chocolate chips . Mix to just combine will do . 

5. Scoop into muffin cup 2/3 filled. 

6. Bake for about 20 minutes till golden brown or skewer comes out clean.

7. Remove and cool on rack.
