Dorayaki is a Japanese snack. It is a sandwich using pancakes with red bean paste in between. You can also mix the red bean paste with some whipped cream for a creamier filling.
Recipe adapted from cookbook tanoshii wagashi
Ingredients (makes 4 dorayaki)
For pancakes
2 medium eggs
50g castor sugar (original recipe 120g)
15g honey
1/4 teaspoon baking powder
60ml water
130g cake flour
For homemade red bean paste ( or use store-bought)
100g red beans

Method
1. Soak the red beans for 6 hours or overnight.
2. Drain and rinse the red beans and add to a sauce pan. Add water up to 1.5 inches above the beans. Bring to boil, then simmer for about 1 hour until the beans are cooked. Check the water level regularly to ensure it doesn't dry up. Add a bit of water when necessary. The red bean paste should not be too dry nor runny when done. Add sugar to sweeten the red bean paste accordingly to your preference. Stir well to melt the sugar and leave it to cool.
3. To prepare pancakes, add the eggs and sugar into a mixing bowl and whisk lightly till the mixture is pale. Add honey and whisk again to combine.
4. Mix baking powder and 60ml water. Add to the batter and mix to combine.
5. Sift in the flour and fold to combine. Ensure there is no lumps.
6. Heat up a non-stick pan. Oil the pan lightly and wipe away any excess oil. Using low medium heat, scoop a spoonful of batter into the frying pan. The batter will spread out to form a round pancake. I made mine about 9cm to10cm diameter.
7. When the batter starts to bubble, flip the pancake and cook for about 30 seconds. Remove and cool on a wire rack. I cover them to prevent the pancakes from drying up. Repeat to use up the batter.
8. To assemble, scoop some red bean paste and sandwich it between 2 pieces of pancakes. Press the rim so that the center will pop up slightly.
9. Best to serve immediately. If not, wrap the dorayaki using cling wrap and freeze it for up to 3 days in the freezer. Thaw before serving or warm up in toaster oven .
