Balsamic Strawberries


Recipe adapted from cookbook Have your cake and eat it too.

Ingredients (serves 3-4)
300g fresh strawberries, hulled and cut in half
about 1.5 tablespoon balsamic vinegar 
35g castor sugar
fresh ground black pepper (optional)
 
Method
1. Place strawberries in a bowl. Drizzle vinegar and sprinkle with sugar. Gently mix to combine.
 
 
 
2. Cover with cling film and let it stand at room temperature for at least 1 hour, but not more than 4 hours. Give it a gently stir after 1 hour. Depending on the size and tartness of the strawberries, the time required and taste may varies slightly. I like to use medium or small strawberries and they taste great after 2 hours.
 
3. Just before serving, sprinkle some fresh black pepper if you like. They make great toppings for  pancakes, crepes, parfait or ice-cream too.
