Mango Sticky Rice



Mango sticky rice ( serves 3 to 4 )

Ingredients
150g glutinous rice (or slightly less according to your preference)
150g coconut cream
1 tablespoon sugar (or more according to your preference)
a good pinch of salt
1 ripe mango ( medium size )

Method
1. Soak the rice in water overnight or for about 5 - 6 hours. 

2. Rinse and drain the rice. Steam the damp rice over low-medium heat for about 20 minutes till the rice is translucent and cooked.

3. While the rice is steaming, warm up the coconut cream in a sauce pan over low heat. Add sugar and salt, stirring constantly . Remove from heat just before it starts to boil.  Set aside.

4. Cut the mango into cubes or slices according to your preference. Set aside.

5. Set aside about 2 to 3 tablespoons of the coconut cream mixture for drizzling. When the rice is cooked, pour the remaining coconut cream mixture over it and mix well. Cover the lid and let it sit for 5-10 minutes to allow the hot rice to absorb the coconut cream.

6. To serve, place mango next to or over the warm rice. Drizzle with the remaining coconut cream mixture. Bon Appetit!
