Baked Cheesy Cauliflower & Broccoli


My kids really like this dish. I love it too because I like anything cheesy. Great dish to get kids to eat more vegetables. I used a mix of cheddar and parmesan cheese. You can use any of your favourite cheese.
 
Baked Cheesy Cauliflower & Broccoli (serves 4)
 
Ingredients
1 small cauliflower, cut into small florets
1 small broccoli, cut into small florets
1 clove of garlic, thinly sliced
 
Cheesy Sauce
30g butter
30g flour
300ml milk
70g parmesan or cheddar cheese, grated or cut into small cubes + a bit for sprinkling on the top
salt and pepper
 
Method
1. Bring a pot of water to boil, add cauliflower first and cook for about 3 minutes. Add broccoli and cook together for another 2-3 minutes till they are slightly soft. Drain and place them on a baking dish. Add garlic and season lightly with salt and pepper.
 
2. In a saucepan, melt butter on low heat. When melted, add flour and stir constantly to form a thick mixture. Add the milk, stirring constantly to get rid of any lumps. Cook and stir at the same time till thickened and smooth. (takes couple of minutes) 
 
3. Lastly, add the cheeses and take off the heat. Continue to stir till cheese has melted .
 
4. Pour the sauce over the vegetables and sprinkle with cheese. Bake at 180 degree for about 40-45 minutes till golden brown.
 
5. Serve immediately.
