Potato Salad


I make this simple dish regularly because it never fails to delight both kids and adults. Hope you like it too !

Potato Salad (serves 4-6)

Ingredients
8 small potatoes, peeled and cut into small pieces 
1 large carrots, peeled and cut into cubes
1 japanese cucumber, sliced thinly
3 shallots, sliced thinly
2 eggs
1 tablespoon vinegar
3 to 4 tablespoons of japanese mayonnaise
Salt and pepper



Method
1. Boil eggs for about 10min. Mash hard-boiled eggs with a fork. Set aside.


2. Boil carrots till cooked. Drain and set aside to cool a bit.

3. Sprinkle some salt on the sliced cucumber. Give it a quick mix and let it sit for 5 minutes. Rinse and drain and gently squeeze to remove excess water. Set aside.
 

4. Boil potatoes till cooked. Drain and add 1 tablespoon of vinegar. Mash the potatoes in a big bowl. Let it cool slightly before adding the rest of the ingredients.

5. Add shallots, carrots, eggs and cucumber. Season with mayonnaise, salt and pepper and mix well to combine. Adjust seasoning according to your preference.

 
6. Chill in fridge before serving. Taste better when slightly chilled.
