Steamed Chicken Drumstick with Essence of Chicken


Ingredients (serves 2)
2 chicken drumsticks 
1 bottle of essence of chicken
1.5 cm knob of old ginger
1 small handful of wolfberries
spring onions and/or coriander for garnish 
a splash of shao xing wine or hua diao jiu
soy sauce and pepper

Method 
1. Remove the skin of the chicken. You can keep the skin on if you like. Lightly season the chicken with pepper. 

2. Slice the old ginger thinly. Rinse and drain the wolfberries. Add both to the chicken drumsticks.

3. Add 1 teaspoon of soy sauce to the bottle of essence of chicken. Pour over the chicken drumsticks. Add a splash of shao xing or hua diao and mix well. Cover with cling wrap and put it in the fridge to marinate for 2-3 hours or longer.  I prefer to use a bowl to marinate, so that the drumsticks will be soaked in the essence of chicken.
 


4. Prepare a steamer. Steam the chicken on medium heat for about 30 minutes until the chicken is cooked through. Garnish with spring onion and/or coriander and serve immediately.
